Pancake Day!

Pancakes Day was traditionally a day to use up all the goodies (diary, sugar..) before a fast. Eaten all year, they can be a Canny Kitchen staple. You can mix small pieces of cooked veg or fruits into the batter to use up last wee bits (and hide the healthy bits from the kids). The varieties of fillings - mushrooms cooked and cream cheese stirred through? or grilled veggies or.... (send in your suggestions!)

Leftover porridge

We invariably don't get the portioning right for Porridge (or porage?) in the morning, something I blame on the fickle nature of my daughters' breakfast choices. However I've found this isn't too much of a problem as it (a) heats up OK the next day and more importantly (b) makes a great thickener for sauces, stews and cassaroles.

Have any left over fruit or veg then why not make your own smoothies or soup from them?
